IPAD type note taking alternatives for teachers?

What do you want advice about?
I’m a teacher and I want a device to take notes on and share digitally, I want something like a stylus because most notes are not just English text. I have equations, figures, comments etc. I would prefer not using an IPad.
What have you considered or looked at already?
I have looked into galaxy tabs, remarkable and boox. Galaxy comes with a lot of bloatware like apple that I don’t want. Boox also comes with extra features like apps and browsers. I just want writing/reading/sharing capabilities. Remarkable seems to be the only one.
In brief, tell us about your privacy threat model?
I’m a regular person who likes to keep things away from large corporations and I want to practice minimalism in my digital life. I don’t want a fancy device but using paper for notes is getting hard with more classes and books.

iPad might be your best option for a secure private and usable note taking device. The other options are far less private, or insecure.

I agree with that, at least as far as I can see. I really wanted to just see if there is anything available that I may have missed. But I guess not.
