Try whoogle, it’s a self hosted search engine which will give google like results, metadata-cleaner for clearing your meta data from images and docs. You could also use shred a cli tool to shred files just type shred -u file_name.
If you are using an normal citizen’s threat model there aren’t many apps linux need for security. The main thing you should do is enabling full disk encryption.
As for privacy, the best youtube alternative I know of (besides not using youtube):
