Apple/IOS pros input please, how much is done on device?

What do you want advice about?
Best IOS practices for an android user

What have you considered or looked at already?
I use a mac and have some idea of settings to adjust

In brief, tell us about your privacy threat model?
I would say threat model is mid. More than a regular joe blow as i use my phone for business, but nothing super sensitive.

TLDR: I am an android phone user, sick of the bloat wear and apps i can not remove, who is moving to IOS. What are best practices please?

So short and sweet, i currently use mac desktop, and macbook air for work, so figure its time to move over the phone also. I considered graphene but want to try ios and see if life is easier, and safer.
I have my macbook/desktop set up i think relatively safely, advanced data protection is on, i dont use siri at all, but noticed a few things the other day.
When adding some contacts to the desktop in preparation siri had added extra info i had not input, addresses, emails etc. Looking into the contacts app settings, even though siri is off there is a lot of integration auto set up so siri learns from the app etc. I now know this is basically EVERY app, and needs turning off manually. My question is, is this all done on device? And if so, how much is on device? Ar there settings to make things local tha apple can see right now etc?
I understand this is a wide open question, but my goal is to just be as private as is reasonable on the platform. What can apple actually see and store with ADP turned on, what else can i do whilst still getting good functionality please

You should probably adjust the settings on your device, The New Oil has a good guide:

In terms of digital assistants Siri is the least invasive, most audio of your requests to Siri are processed on device using the Apple Neural Engine. Ask Siri and Dictation sometimes sends your requests to Apple, for instance if you ask Siri to play a song in Apple Music Siri will need to contact Apple’s servers to find the song and play it. You can test this though, try asking Siri something without any internet connection. According to Apple requests that are processed on Apple’s servers are associated with a random identifier which is rotated on a 15 minute basis.

From Apple’s Privacy Policy:

Apple stores transcripts of your interactions with Siri and may review a subset of these transcripts. Siri may also send information like your voice input, Siri setup, contacts, and location to Apple to process your request. Data is not associated with your Apple ID.

On-device intelligence such as the suggestions that Siri does of your apps is done on your device and is synced across your devices using end-to-end encryption through iCloud. However some information is sent to Apple about the personalisation but it isn’t associated with you.

It’s up to you to decide whether the helpfulness of Siri is worth keeping on. I would also have a read of these privacy pages on Apple’s website so you can better decide.
