and use the mobile Thunderbird app to access Gmail instead, which I think would be a similar experience to using other IMAP email providers like fastmail.

K9 mail is another great email app for Android. Give that a try. It’s quite popular and reputable of an app and it was remade a couple of years ago I think.

If OP had Thunderbird for Android, it’s the same codebase as K-9 for Android. Since Mozilla acquired it a few years ago, it may not have a long supported life vs Thunderbird for Android.
