You have to trust the DNS resolver, since they can see all of your DNS requests. But if they are trustworthy, I can’t think of any downsides to changing the provider in your router settings. It just depends on who the default DNS provider is vs. who you’re changing to. Different DNS resolvers can have different lookup speeds as well based on a variety of factors, but for most people the speed difference between major DNS services should be negligible.
